I read a great article in the New York Times that stated flat out — the one thing that a cook should stop buy and start making is Condiments. Homemade condiments, the article went on to explain,  are better, brighter, zingier, and zestier when freshly made. They are. But so are a lot of other pantry basics. Recipes to come.
